Rainy day chicken noodle soup

It’s a gloomy rainy fall day today, so it’s a perfect day for hot chicken noodle soup, it fights the sniffles and will warm your very soul when you come in out of the rain.  I love chicken noodle soup, but HATE the can stuff, so this is something I came up with by trail and error, so it’s a dash of this and pinch of that, but it’s amazing and something I’ve had to share with all my friends, it’s amazingly simple and takes NO time!

You’ll need:

What you’ll need

2 packages of chicken breast (about 6 whole boneless breast)

6 stalks of celery

8 medium carrots (use whole carrots over baby carrots)

3 packages of Swanson’s Chicken Stock

3/4 package of wide egg noodles

Sea Salt to taste

pepper to taste

Garlic Powder to taste

Rotisserie Chicken seasoning (cover chicken liberally)

1 tablespoon olive oil

*Prepare chicken by dicing in small cubes, place in sauce pan with 1 tablespoon of olive oil, brown, add a cup of water and cook chicken thoroughly over medium high heat, set aside

Cook Chicken before adding to chicken stock

*Clean celery and slice into small pieces

*Peel Carrots and dice

*Add Celery, Carrots, chicken stock in large pot, bring to boil, reduce to medium high heat, and cook until celery starts to become translucent

*Add prepared chicken and uncooked noodles to chicken stock, add sea salt, pepper, garlic powder to taste

*cook 8-10 minutes (until noodles are done) and serve
